Vegan Take-out

This weekend I took a break from cooking. David and I ordered take-out twice, and we had one sit-down meal at a local eatery. Here's how I ordered vegan:

Friday night dinner from Willy's Mexicana Grill:  On a whim, I stopped by Willy's on my way home from running an errand. This is one of the local restaurants we frequent regularly, typically for take-out. I ordered my usual - burrito bowl with rice, black beans, tofu, grilled onions and peppers, lettuce, salsa, corn and fresh jalapeno. To compliment the bowl, I had salsa, tortilla chips and homemade guacamole from my kitchen.

Saturday morning breakfast at Flavor:  Flavor is a family friendly cafe and bakery located in Sandy Springs. The baked goods looked amazing, but I steered away from them and ordered the tofu scramble. My last experience ordering a tofu scramble at a local diner was extremely disappointing, so I had low expectations for Flavor's version. I was pleasantly surprised.  The texture and flavor of the tofu were perfect.  Even though I would have liked having more variety of vegetables in this dish, the blend of spinach, onions and mushrooms was quite tasty.

Saturday night dinner from Bamboo China Bistro:  This new restaurant had its grand opening in East Cobb last week. It's located next to the gym I go to, and I ran in to grab a menu after my workout on Saturday afternoon. My stomach started growling at the smell of the restaurant. Unfortunately, I didn't have my wallet with me; so I couldn't order anything. I rushed home and sent David for take-out.  I had the Vegetarian Kung Pao made with vegetarian "beef", onions, peppers, carrots, zucchini, mushrooms, water chestnuts, bamboo shoots, baby corn, peanuts and brown sauce. I could only eat half of the meal which worked out well since I heated up the leftovers for Sunday's lunch.
