Today allowed no time for food prep. After 2 weeks of tasting at least one exciting, new dish per day (or so it seems), the gourmet special on today's menu consisted of the "blahs." I don't even know what David ate today. He had to fend for himself in the world of vegan, sugar-free and gluten-free eats. Hopefully, he survived.
I resorted to making simple, quick and unexciting meals to fuel my energy for the day. The humdrum food selection was exacerbated by the reminder that my birthday is tomorrow, and I won't be having birthday cake! Argh!
My favorite birthday cake is my great-grandmother's strawberry cake recipe. It's so moist it melts in the mouth; and there's nothing healthy about it, save the strawberries. David has started asking for this same cake on his birthday. It's a family favorite, and the cake is easily devoured when we are all together.
Speaking of sweets, one of my piano students left a cookie for me on the piano today. The thin mint cookie glared up at me, and I felt like Alice who discovers a cake labelled with "Eat Me" in her Adventures of Wonderland. I didn't eat the cookie, but I sure thought about it. Darn the Girl Scout cookie season!
Today's Menu:
Breakfast: Cornflakes with blueberries and unsweetened soy milk.
Lunch: Almond butter and banana sandwich and part of a Granny Smith apple
Dinner: Spinach salad with carrots, celery, pumpkin seeds, chunks of garden veggie tempeh and goddess dressing
Snacks: Lara Bar and Go Raw Trek Mix from Trader Joe's
